Salsa and Chips

  1. In a large saucepan combine tomatoes, onions, garlic, and basil.
  2. Bring to a boil.
  3. Reduce heat and simmer for 5 minutes.
  4. Remove from heat.
  5. Cool to room temperature for about 30 minutes.
  6. Serve with tortilla chips.

Hot Spinach Artichoke Dip

  1. Preheat the oven to 350 degrees F.
  2. Grease a casserole dish with nonstick spray.
  3. Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry.
  4. Drain the artichoke hearts and coarsely chop in a food processor.
  5. Combine all the ingredients in a large bowl. Stir well!
  6. Scrape into the prepared casserole dish and sprinkle jack cheese on top.
  7. Bake for 30 minutes.
  8. Transfer to a chafing dish and keep warm over a low flame. 
  9. Suggestion: serve with bagel chips.
